Best Homemade Granola

I never realized granola is super easy to make! If I'd known I would have been making it for years =)

It's also super customizable, which makes it fun.

INGREDIENTS:
(dry)
3 cups rolled oats
3 tbsp brown sugar
1/4 tsp salt
1/2 tsp cinnamon

(wet)
1/4 cup honey
1/4 cup canola oil
1 tsp vanilla extract

(options)
1 1/2 cups golden raisins
1 cup toasted pumpkin seeds

DIRECTIONS:
1. Preheat oven to 300°F
2. In a large bowl, stir together dry ingredients.
3. In another bowl, stir together wet ingredients.
4. Dump wet mixture over dry and stir well to coat and mix evenly.
5. Spread mixture thinly and evenly on a baking sheet.
6. Bake, stirring after 15 minutes, until the granola is a very light golden brown.
(if you're like me and you like your granola crunchier with a toastier flavor, bake it a little longer. But make sure to keep a close eye on it-if it gets dark it will taste burnt.
7. Cool the granola and then mix with 1 1/2 cups golden raisins and 1 cup toasted pumpkin seeds.

Raclette Cheese and Onion Quiche

It got cold and I didn't feel like going shopping for dinner so I opened the fridge to see what we had... Leftover Raclette cheese that some friends generously gave us =) milk, eggs, onions... hmmm... quiche!

CRUST INGREDIENTS:
1 1/2 cups flour
2 tsp sugar
3/4 tsp salt
1/2 cup vegetable oil or olive oil
2 tbsp milk

CRUST DIRECTIONS:
Mix dry ingredients in pie dish.
Slowly pour in wet ingredients and mix well with a fork till everything is moist.
With clean fingers press dough into pie dish to cover evenly.
Bake at 375°F for 5 minutes and then set aside.

FILLING INGREDIENTS:
3 large eggs
1 1/2 cups milk
1/4 tsp salt
1/4 tsp pepper
1 cup shredded Raclette cheese (or whatever cheese you happen to have, preferably cheddar if not Raclette)
1 medium sized onion chopped

FILLING DIRECTIONS:
Beat eggs and then mix rest.
Pour into shell
Bake at 375°F for approximately 35-45 minutes.
Check to see if done by jiggling, if the middle still wiggles, its not done.
Once the middle stops wiggling while jiggled, you can giggle and stick a toothpick in to see if it comes out clean =)
Clean toothpick=done! let it cool a bit and then enjoy!
