Momma's Cookies

Ok, so we're on day 90 something of quarantine... I've been making these cookies for years, and I'm finally putting them on here to keep track of the recipe, just in case.

They're the easiest to make, and sooooo delicious. 

INGREDIENTS
Dry:
1 1/3 cup (160g) organic whole wheat pastry flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup organic rolled oats
3/4 cup semi-sweet chocolate chips
1/2 cup brown sugar, packed
1/2 cup white sugar
1/3 – 1/2 cup chopped pecans
Wet:
1 slightly beaten egg
1/2 cup butter (melted slightly in the microwave)
1 teaspoon vanilla

DIRECTIONS:
1. Preheat oven to 350°F
2. Stir all the dry ingredients in a large mixing bowl.
3. Add wet into dry ingredients. Use the back of a large spoon to work it all together. You may even need to use your hands to get everything incorporated.
4. Then roll the cookie dough into 1 1/2 inch balls, flatten into a patty, place on a parchment covered baking sheet and bake for about 10 minutes in a preheated 350 degree oven.

Let them sit for a minute before transferring to a cooking rack, then let them cool enough to firm up.
If you like a chewier/softer cookie, keep to the 10 minute baking time.
If you like a crunchier/harder cookie, bake for an extra 2-3 minutes.

These will keep well in an airtight container at room temp for at least a week, but they usually disappear before then.
