Quinoa Breakfast Porridge


I've been hooked on quinoa for a while now. It's the most amazing grain. It's super easy to cook, adapts to any flavor (sweet, savory, spicy), happens to be gluten free and it's the only whole grain that is a complete protein! In my opinion it's magic.

I decided to experiment to see if it would be good for breakfast, if I cooked it like oatmeal.

INGREDIENTS: (made 1 1/2 cups cooked)
1/2 cup quinoa
1 1/4 cup soy milk or milk
1/4 up raisins (or any other dried fruit you like)
1 tbsp brown sugar
1/4 tsp salt

(if you want to get fancy add:
- pinch of cinnamon
- splash of vanilla extract)

DIRECTIONS:
1. Mix ingredients together in a small saucepan.
2. Bring to simmer, but not full rolling boil.
3. If covering watch for enthusiastic frothing, if uncovered be prepared to add a little more milk.
4. Simmer for approx 10-15 minutes. (If you like your quinoa a little chewier then 10 min, if you like it softer then 15 min.)
5. Ready to serve!
