Japanese Cucumber Salad

This salad is super easy to make and very refreshing.

Ingredients:
2 large cucumbers, peeled
1/3 cup rice vinegar
4 teaspoons white sugar
1 teaspoon salt
2 tablespoons toasted sesame seeds

Directions:
Wash, peel and then cut cucumbers in half lengthwise and scoop out any large seeds. Slice crosswise into very thin slices and place in a bowl.

In small sauce pan, mix rice vinegar, salt and sugar. Set pan over low setting, heat and stir till sugar and salt dissolve into vinegar (no need to boil)

Pour rice vinegar/salt/sugar mixture over sliced cucumbers, cover and set in refigerator to cool for at least 15-20 minutes. (can be stored up to 5 hours and still taste good)

When ready to serve, place in individual bowls and sprinkle toasted sesame seeds over.
